INGREDIENTS
- ¼ cup veggie broth
- ¼ cup pineapple juice (can be from can of pineapple)
- ¼ cup tamari sauce
- 1 tbsp. maple syrup
- 1 tbsp. fresh grated ginger
- 1 tsp garlic powder
- 1 tsp sesame oil
- 1 tbsp. coconut oil
- ½ cup plain, unsalted cashews
- 2 cups chopped broccoli
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup chopped shiitake mushrooms
- 1 cup shredded green cabbage
- 1 cup diced pineapple (preferably in its juice)
- Cooked protein of your choice (extra firm tofu, tempeh, chicken breast)
DIRECTIONS
- Whisk first 6 ingredients together in a bowl and set
- Heat a large skillet with coconut oil and toast cashews for 2 minutes then remove from heat and set
- Add the veggies to the skillet and sauté for about 8 minutes. Add in the pineapple and sauté for another 5 minutes. Add the sauce and cook until sauce thickens- about 3 minutes. Combine with your protein of choice and serve with cashews sprinkled on top.
