PINEAPPLE GINGER STIR-FRY

INGREDIENTS

  • ¼ cup veggie broth
  • ¼ cup pineapple juice (can be from can of pineapple)
  • ¼ cup tamari sauce
  • 1 tbsp. maple syrup
  • 1 tbsp. fresh grated ginger
  • 1 tsp garlic powder
  • 1 tsp sesame oil
  • 1 tbsp. coconut oil
  • ½ cup plain, unsalted cashews
  • 2 cups chopped broccoli
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 cup chopped shiitake mushrooms
  • 1 cup shredded green cabbage
  • 1 cup diced pineapple (preferably in its juice)
  • Cooked protein of your choice (extra firm tofu, tempeh, chicken breast)

DIRECTIONS

  • Whisk first 6 ingredients together in a bowl and set
  • Heat a large skillet with coconut oil and toast cashews for 2 minutes then remove from heat and set
  • Add the veggies to the skillet and sauté for about 8 minutes. Add in the pineapple and sauté for another 5 minutes. Add the sauce and cook until sauce thickens- about 3 minutes. Combine with your protein of choice and serve with cashews sprinkled on top.

Makes 2-3 servings.
