INGREDIENTS
• 1 tbsp. coconut oil
• 2.5 cups fresh or frozen berries
• ¼ cup maple syrup
• 1 cup almonds
• ½ cup oats
• ½ cup pecans
• ¼ cup chia seeds
• 2 tbsp. Earth Balance butter
• 1 tsp cinnamon
• 1 tsp vanilla extract
• ¼ cup maple syrup (optional)
• Sprinkle iodized salt
DIRECTIONS
• Preheat oven to 400 degrees.
• Place almonds, pecans, oats, butter, chia seeds, cinnamon, vanilla, salt and maple syrup in a high speed blender or food processer. Pulse several times until it reaches your desired consistency. Set aside.
• Heat a medium skillet and sauté berries for 5 minutes until softened and juicy. Add optional maple syrup. Remove from heat.
• Sprinkle nut mixture on top of berries. Place skillet in over for 10 minutes, until lightly browned. Remove and allow to cool before serving.
Makes 6 servings.
